Old Vines Cabernet Shiraz

Tahbilk Old Vines Cabernet Shiraz is a quintessential Australian blend of Cabernet Sauvignon (60%) and Shiraz (40%). Fruit is handpicked from Cabernet vines dating back to 1949, and Shiraz back to 1860 and 1933.
Initially produced in 1957, the wine is believed to be among the first of such estate grown blends in Australia. A 15 year hiatus followed, but the blend was resurrected in the 1970s.
Tahbilk's red winemaking has not differed significantly since 1860. The fruit is crushed and pumped into the winery's original oak fermenters. Fermentation occurs with cultured yeasts, pumped over twice daily.
The wine matures for 18 months in new and seasoned French and American oak barrels. Once bottled, it is cellared for a further 12-18 months prior to release.
Dark red, Tahbilk Old Vines Cabernet Shiraz has ripe dark fruits and savoury, earthy, chewy tannins. Judicious use of oak adds complexity. Cellaring potential is 10 years.
